Pork with a Five Spice Plum Sauce

Change up your usual pork dish with this aromatic, Chinese-influenced plum sauce. Sweet and tangy…a beautiful taste paired with succulent pork medallions and a smooth sweet potato mash.

In this recipe, I reveal how to perfectly cook your pork medallions to enjoy with this wonderful sauce. Following the method, your pork medallions will be cooked in just approx. 20 minutes (seared and then cooked in an oven) and expect a beautiful juicy, succulent taste.

Approx. time in total to make: 35-40 minutes

Serves 4

Ingredients

-4 pork medallions

-4 plums sliced (keep the skin on)

-2 chopped garlic cloves

-Knob of ginger

-2 tablespoons apple cider vinegar

-3 tablespoons dark soy sauce

-100ml water

-2 tablespoons brown sugar

-1 teaspoon Chinese five-spice

-1 teaspoon honey

-salt and cracked black pepper

-serve with sweet potato mash

Method

-Preheat the oven to 180 degrees celsius.

-In a saucepan add plums, garlic, ginger, apple cider vinegar, soy sauce, water, sugar Chinese five-spice and honey.

-Simmer with a lid on for approx. 15-20 minutes till the plums break down.

-Meanwhile, season the pork with salt and pepper and sear the pork medallions in a frying pan on high heat; till the outer sides of the pork turn white then slightly browned.

-Transfer the pork into a baking tray and place it in the oven on the top shelf for 10 minutes.

-Blend the spiced plum sauce and serve hot with the cooked pork medallions. Serve with sweet potato mash.
