Pickled Cucumber

A refreshing and tasty side dish. Pairs well with our Vegan Cranberry Teriyaki Burger.

Approx. time to make: 5-10 minutes

Ingredients

-1 large cucumber

-3 tbsp rice vinegar

-1 tbsp soy sauce

-Drizzle of toasted sesame oil

-1 tsp toasted sesame seeds

-1 tsp sea salt or fine table salt (whatever you have at hand)

-1 tsp white sugar

Method

-Ribbon the cucumber using a vegetable peeler. Avoid peeling the center of the cucumber as it may be too soggy.

-Add the cucumber ribbons to a bowl and add rice vinegar, soy sauce, a drizzle of sesame oil, sesame seeds, sugar and salt. Mix and enjoy fresh right away - you don’t have to wait for a pickling process with this recipe.
