(Vegan) Collard Green Burritos

These Collard Green Burritos are both vegan and gluten-free! This is a great way to swap out your usual fajita, chicken strip or BBQ meat wraps for a healthier veggie alternative. An easy way to ease into a balanced diet.

This recipe uses plenty of beans to still provide protein and to be a filling substantial meal while also freeing up cupboard space; using all the cans you’ve had sitting in the cupboard for too long. Give it a shot.

Approx time to make (including prep): 40 - 45 minutes

Ingredients

-1 can of kidney beans

-1 can of black-eyed beans

-3 garlic cloves

-half a chilli chopped (do 1 whole chilli chopped if you prefer the heat)

-1 can of chopped tomatoes

-2 tbsp HP brown sauce

-1 tsp smoked paprika

-1/2 tsp ground cumin

-1/2 tsp brown sugar

-1 sachet microwavable Mexican rice or preferred rice packet

-1/2 tsp fine table salt

-2 Large Collard green bunches (2 large collard green leaves per person)

-Topping ideas: Chopped bell peppers, sweetcorn, vegan cheese

-Non-vegan topping ideas: cheddar cheese, chilli cheese, sour cream or creme fraise

Method

-In a large saucepan add garlic, chopped chilli, kidney beans, black-eyed beans, spices(smoked paprika, ground cumin), chopped tomatoes, brown sauce, sugar and salt. Add half a can of water.

—Microwave the microwavable Mexican rice sachet for the advised package time. Once the rice is done, add to the saucepan with the sauce.

-Leave the burrito mix to cook through for 20-30 minutes, stirring every so often.

-As the burrito mix cooks, lay out the collard green leaves and cut off the uppermost of the stalk sticking up.

-Put the collard green leaves in a large tray or container and pour over hot water. Leave to sit in the hot water for a minute and then take out of the water and pat dry. The hot water allows the leaf to be more pliable to bend instead of snapping (but this is not essential to do).

-Layer two large leaves on top of each other and spoon some of the burrito mix onto them. I used two large leaves per wrap per person but you may prefer to use only one large leaf per person or even perhaps 3 or 4 per wrap. At this stage add your desired topping (I have noted some topping suggestions in the ingredients list above). Pull the two opposite sides of the leaf wrap into the middle and bring over the top flap and roll towards yourself; creating a secure wrap encasing your fillings.

-Cut in two. These go well with chips as a meal.
