Carbonara with Chicken

Classic Carbonara doesn’t usually involve chicken but this recipe does because you can’t beat a chicken and bacon creamy pasta situation!

The chicken in this recipe is pan-fried in the smoked bacon-infused oil, giving more taste to your incredibly simple yet unbelievably delicious creamy sauce.

This is a recipe anyone can do even if you’re a beginner in the kitchen. The combinations of smoked bacon, chicken, cheese and pasta are enough to make anyone drool!

Makes 4 servings


Ingredients

-400g spaghetti (100g spaghetti per person)

-4 egg yolks

-100g of parmesan

-1 or 2 large chicken breasts sliced

-100g smoked bacon lardons

-Sea salt and cracked black pepper

-Olive oil

-Reserved pasta water - remember not to throw this away as it is needed for the sauce

Method

-Cook the spaghetti in a pan of boiling water to the time according to the package directions. Season the pasta water with a glug of olive oil and a heavy pinch of salt.

-In a bowl, mix the yolks and parmesan till combined. Season with cracked black pepper.

-While the pasta cooks, in a separate large frying pan drizzle in some olive oil and when hot add the bacon lardons. Pan fry until fully cooked through then remove and put aside.

-In the same frying pan (with the leftover bacon-infused oil) add in the sliced chicken breast. Season with salt and pepper. Once fully cooked through, remove from the pan and set aside with the bacon lardons.

-When cooked, drain the spaghetti (but make sure to keep at least 100ml of the pasta water aside).

-Turn the heat to the frying pan off, but again using the same frying pan with all the flavored oil and juices remaining, add all the spaghetti into it.

-Bit by bit, add the yolk parmesan mixture to the pasta and mix it in. Gradually as you add in the yolk mixture also add in a little of the pasta water till a sauce builds and coats the spaghetti.

-Now assemble the dish by serving the spaghetti, sprinkle over more parmesan, sea salt, black pepper and add on top the lardons and portions of the sliced chicken breast. Enjoy.
