Chestnut Burgers with Camembert,Cranberry Sauce and Caramelised Onions
Chestnuts roasting by an open fire…the thought of chestnut and camembert burgers bring Christmas to the forefront of the mind. These are a great option to serve up at Christmas time to your vegetarian guests.

Makes 4 burgers
Ingredients
-250g chopped button mushrooms
-knob of butter
-Salt and pepper
-1 tbsp Henderson’s Relish or Worcestershire sauce
-180g precooked chestnuts
-100g breadcrumbs
-Camembert
-Cranberry sauce
-Caramelised onions
-4 bread buns
Method
-Gently fry chopped mushrooms in an oiled frying pan and season.
-Add a knob of butter and a tbsp of Henderson’s Relish or Worcestershire sauce to the mushrooms.
-Remove from the heat once the mushrooms are cooked.
-Preheat the oven to 180 Degrees Celsius/gas 4.
-Chop the chestnuts(these should be pre-cooked chestnuts that you can get from almost every supermarket) and add to a mixing bowl.
-To the chestnuts, add the fried mushrooms and breadcrumbs. Whizz in a food processor to a mouldable consistency.
-Add an egg to bind the mix together and shape the chestnut mix into burgers.
-At this stage, I recommend putting the camembert into the oven as they typically take 20 minutes to turn oozy.
-5 minutes after putting the camembert into the oven, put the burgers in a large oiled frying pan over a relatively high heat and fry each burger for approx. 8 minutes on each side.
-Top the sliced bottom of the burger bun with cranberry sauce, then add the burgers and top each burger with lots of the oozy camembert cheese(or you could alternatively dip the burgers into the camembert cheese as you eat). Finish with caramelised onions and the burger bun top.
