(Vegan) Butternut Squash and Sage Soup

Simple, easy and delicious!

Approx. time it takes to make this soup: 30 minutes (including prep and cooking time)

Ingredients:

-1 Butternut squash (Peeled, deseeded and diced)

-1 onion chopped

-2 garlic cloves crushed

-6 sage leaves

-1 teaspoon celery salt

-Ground pepper

-800ml Vegetable stock

-1 tablespoon of olive oil

Method:

-In a large saucepan with a tablespoon of olive oil, fry the onion until translucent.

-Add to the pan the crushed garlic along with the butternut squash.

-Sprinkle over one teaspoon of celery salt and coat the squash, onion and garlic evenly with it.

-Pour in 800ml of vegetable stock with the chopped sage, stir and cover with a pan lid. Leave on a medium heat, stirring every so often, for 20 minutes.

-Using a hand held blender or machine, blend the soup mixture until smooth. Add ground pepper to season to your liking and blend further.

-Serve and enjoy!
