Spiced Parsnip Soup

This hearty vegetarian soup is the perfect starter for Christmas day's dinner or simply a delicious dish alone for warming the soul on those colder days.

Approx. prep time: 5-10 minutes

Serves 6


Ingredients

-6 parsnips

-1 large white onion

-2 garlic cloves crushed

-Grated knob of ginger

-knob of butter

-Half a tsp cumin seeds

-Half a tsp ground coriander

-1 tbsp garam masala

-500ml vegetable stock

-150ml double cream

-Salt and pepper


Method

-Chop the parsnips (keep the skin on, that holds the flavour) and dice the onion.

-Over a high heat in a saucepan, drizzle in olive oil and fry the parsnips and onion.

-Add to the saucepan garlic, ginger and spices.

-Pour in the vegetable stock and cover the pan with a lid, leaving on a simmer for 15 minutes.

-Blend the soup and pour in the double cream.

-Blend further and season with salt and pepper to taste.

-Dress the soup with chopped red chilli, a drizzling of double cream and a couple of parsnip crisps.
