Mini Rocky Road Christmas Puddings
These adorable mini Christmas pudding rocky roads are the perfect hosting treats or homemade gifts which will be thoroughly enjoyed. They melt in your mouth and are the ideal portion size per person.

Makes 15 Mini Christmas Pudding Rocky Roads
Ingredients
-100g unsalted butter
-180g dark chocolate
-3 tbsp golden syrup
-65g mix of sultanas and currants
-100g broken up digestive biscuits
-50g mixed peel
-2 large handfuls of mini marshmallows
-25g white chocolate
-Pomegranate seeds(2 seeds per rocky road so roughly 30 seeds)
-30 mini paper holly leaves or edible sugar holly leaves(2 per rocky road pudding)
You will need a couple of hemisphere moulds to achieve the rounded Christmas pudding look.
Method
-Melt the butter over a bain-marie and add in the chocolate, golden syrup, sultanas and currants, mixed peel, digestives and mini marshmallows. Make sure everything is coated well in the chocolate.
-Spoon the rocky road mix into the hemisphere moulds. Put in the fridge and leave them to set for at least two hours.
-When set, melt white chocolate over a bain-marie and spoon a little over each mini pud. Decorate with pomegranate seeds and edible or paper holly leaves. You may need to dip the ends of the pomegranate seeds and holly leaves into the white chocolate to get them to stay in place. Place back in the fridge again and enjoy them once they have set. Or have them ready in advance for gifts or for when you need them.
