Spicy Cheddar Parathas

Ingredients

-200g strong white bread flour or plain flour

-140ml warm water

-1 tsp white sugar

-1 tsp salt

-Block of spicy cheddar cheese

-1 tbsp butter melted

Method

-In a mixing bowl combine the flour and warm water with your hands to form a dough.

-Knead for roughly 5 minutes and cover with a teatowel. Leave to prove for 20 minutes.

-Divide the dough into 8 sections and with each segment roll out so the segment becomes elongated in length.

-With a pastry brush, brush over a bit of melted butter onto the elongated dough strip.

-Roll the elongated strip into a compact spiral to replicate a cinnamon bun appearance.

-With the dough upright, having the spiral visible from a birdseye view, using a rolling pin compress and roll out the dough into a flattened circle mimicking a wrap/tortilla appearance.

-Do this with all dough segments.

-Take one of the rolled out paratha circle sheets and top with grated chilli cheddar to your preference.

-Take another rolled out sheet and lay that upon the sheet with the chilli cheddar on; so the cheddar is no longer visible.

-With the rolling pin roll out the layered sheets to merge into one and ensconce the cheddar tightly inside the dough sheets.

-Do this with all rolled out dough sheets to form 4 chilli cheddar stuffed parathas.

-In a frying pan, over a high heat, start by adding additional butter with a brush to the outside of the first paratha and put it into the frying pan. As that fries add more butter to the side of the paratha not in direct contact with the frying pan using a pastry brush.

-Once the side in contact with the pan turns golden, flip and fry the other side.

-Take out of the pan and enjoy warm. Cook all the other prepared parathas in the same way.
