Vegan garlic, butter bean, preserved lemon and mint purée
This recipe is simple. As long as you have all the ingredients at hand all you have to do is put them in a blender or food processor and then enjoy. Time it takes to make: 5 minutes
Ingredients:
-Can of Butter beans
-1 preserved lemon
-2 cloves of garlic
-Dash of sea salt
-Handful of mint
-100ml olive oil
-1 teaspoon of water to thin the consistency
Method
-Places the butter beans, garlic, salt, mint, oil and juice of one preserved lemon with a little of the lemon rind sliced or grated into a blender or food processor.
-Serve and enjoy. I recommend having it with flatbreads and my homemade vegan spiced Falafel.
