Vegan garlic, butter bean, preserved lemon and mint purée
Time it takes to make: 5 minutes
Ingredients:
-Can of Butter beans
-1 preserved lemon
-2 cloves of garlic
-Dash of sea salt
-Handful of mint
-100ml olive oil
-1 teaspoon of water to thin the consistency
Method
-Places the butter beans, garlic, salt, mint, oil and juice of one preserved lemon with a little of the lemon rind sliced or grated into a blender or food processor.
-Serve and enjoy. I recommend having it with flatbreads and my homemade vegan spiced Falafel.
