Spicy Satay Pork Curry

Spicy, delicious and enriched with Thai flavors…..a great dish for colder nights. A pure comfort dish.

Serves 2-3 people

Ingredients

-380g diced pork

-1 sliced red pepper

For the pork marinade:

-Grated ginger -2 tbsp Thai curry paste

-82ml coconut milk -1 tsp fish sauce

-2 cloves of garlic crushed -1 tbsp light soy sauce

For the spicy satay curry sauce:

-Sesame oil -1 tbsp soy sauce

-2 cloves of garlic crushed -82ml coconut milk

-Grated ginger. -1 heaped tbsp peanut butter

-1 red chilli chopped. -1 tbsp oyster sauce

-1 tbsp fish sauce

Serving suggestions: serve with rice, chips and garnish with a little chopped red chilli.

Method:

-Begin by marinating the pork: Place diced pork in a plastic sealable bag or container and add crushed ginger, garlic, soy sauce, Thai curry paste, fish sauce and coconut milk. Using your hands or by shaking the sealed bag around, try to evenly coat all the pork chunks in the marinade. Leave for half an hour to an hour in the fridge to let the flavours do their magic.

-Once the pork has marinated, in a wok over a medium heat drizzle in sesame oil and add chopped garlic and ginger into the oil. Cook until the garlic is turning golden but do not burn the garlic and ginger by having the wok over too high a temperate.

-Add the pork to the wok with the chopped chilli and allow the pork to cook for 5-10 minutes.

-Then go ahead and add in the sliced red pepper, fish sauce and oyster sauce, coconut milk, sugar and peanut butter.

-Put a lid onto the wok and leave for roughly 15-20 minutes for the sauce to thicken and enrich with all the flavours of Thai cuisine. Now is a great time to put the rice on the go or chips etc.

-Serve with an additional garnish of a little sliced chilli (if you enjoy an extra kick of heat) rice and chips.
