Cream of Pumpkin Soup

Approx. time to make: 1 hour to 1 hour 15 minutes (including prep and cooking time - but time depending on the cooking time for the pumpkin to soften).

Serves 4

Ingredients

-600g pumpkin (peeled, deseeded and chopped)

-2 chopped carrots

-800ml vegetable stock

-70ml double cream

-1 onion chopped

-1 garlic clove crushed

-1 tablespoon olive oil

-Salt and pepper

Method

-In a large saucepan over a medium heat, add olive oil, onion, garlic, carrots, pumpkin and stock. Put a lid on saucepan and leave for 40 minutes.

-Blend. Add in double cream and blend until smooth.

-Season with salt and pepper to taste and stir through.

-Serve and enjoy.
