Leek and Potato Soup

A wholesome classic thats perfect for those rainy, cold days.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients: Serves 4

-4 small leeks or 3 large leeks

-2 large potatoes

-1 litre vegetable stock

-Knob of butter

-1 small onion

-Salt and Pepper


Method:

-Chop the small onion, leeks and peel and chop the potatoes ready for use.

-In a large pan add a drizzle of olive oil and fry off the onion until translucent.

-Then add in the leeks and sauté until they turn soft and wilted.

-Add a knob of butter and then the chopped potatoes, stirring evenly.

-Pour in 1 litre of vegetable stock and cover the pan with a lid, leave for 10-15 to allow the potatoes to soften.

-Blend using a hand blender and add salt and pepper. Blend again and then serve hot.
